In the glow of the setting sun over the Bellarine peninsula a Kestrel hovers with precision above the fields of the distillery with its keen gaze locked on a mouse far below. This whisky captures the essence of this dashing bird of prey: a bold hunter, strong and assertive yet soars with elegance and grace.

This limited release single malt whisky is a marriage of three 100L refill Apera casks. After four years in refill casks the oak influence is light, refined and elegant allowing the spirit character to shine through. This character combines with the remaining hints of Apera to provide a full charcuterie of flavours.

TASTING NOTES

Nose: Jamón Serrano, beeswax, plum jam on rye.

Palate: Orange blossom honey & salted roast cashews.

Finish: Seared figs, maple syrup, walnuts.
