Teddy & The Fox, Bellarine Gin

 
 

Small batched and hand crafted on the Bellarine.

The Teddy and The Fox name was born from a chance encounter with the family dog, Teddy and our resident fox. The fox stuck his head out of the old wood shed at just the wrong time and the chase was on. Teddy never did manage to catch the fox but the fox did seem to enjoy the chase. Teddy and the fox now live in harmony together, where the fox never leaves the den when Teddy is around!

It has strong citrus characteristics with orange and lemon myrtle coming to the fore. It is highly regarded as a sipping gin but also makes a great G & T. We recommend using a light Tonic such as Fevertree’s Naturally Light.

Garnish with a slice of orange - preferably organic or a slice of lemon with a sprig of rosemary. 

Available in 700ml or 200ml bottles or by the glass at the cellar door. It is also available at select venues.

 

The Gin itself is an aromatic blend of 6 botanicals, juniper, coriander, orange, lemon myrtle, orris root and star anise. 

The origin of the recipe is a deeply guarded secret however plenty of fun was had in the evolution from the beginning to the final version!

Rosey & the Rabbits, Aged Gin

Small batched and aged in retired Pinot Noir barrels from Scotchmans Hill Winery

Rosey was a standard poodle who LOVED chasing rabbits . Lets just say she did a very good job of keeping the ever growing rabbit population under control !

 

Juniper spirit, distilled apricots and Middle Eastern black limes spend four months together in ex Pinot Noir barrels from the award winning Scotchmans Hill winery. The oak enhances the brown sugar flavours from the sweet dried apricots whilst the traditionally cured black limes add a salty sour complexity. Grains of Paradise gives sweet butterscotch with a peppery finish.

Serve with Fevertree’s Aromatic tonic and a slice of lime.

The Old Dodger , Navy Strength Gin

 

Dodger was a beautiful old boofhead standard poodle, nothing really fazed him … He and Trooper were brothers and Teddy was Dodger’s Best friend. Dodger would lay in the sun and Teddy would come along and sit on him. !

 

A Classic London Dry Navy strength gin with an Aussie twist . Old world herbs rosemary & tarragon meet Australian coastal saltbush. The distillation is long and slow to fully extract the heavier oils giving this gin its distinctly robust flavour packed character. This is the perfect G & T gin. Serve with Fevertree’s Mediterranean tonic and garnish with a sprig of rosemary and a caperberry.

Trooper & the Roo , Bellarine Gin

 

Trooper did encounter a kangaroo on the property and gave chase…the Roo was last seen bounding down the main road with Trooper in hot pursuit, Trooper eventually ran out of puff but he remained forever vigilant for the elusive Roo!

This dessert style, highly versatile cocktail gin combines roasted wattleseed with organic raw Cacao giving a nutty coffee flavour with a dark chocolate depth. The organic almonds add to the rich nuttiness and rounded mouthfeel . Grapefruit has been used as a balance with a hint of bittersweet citrus.
