The Spirit

The distillery team has constantly been researching and experimenting with flavour – which includes aroma, taste and mouthfeel – of its new make spirit (unaged whisky spirit before it goes in the barrel) since 2018.

We have now achieved the desired qualities that we like in our spirit which provides a weighty, viscous, melted honey-like mouthfeel. Dark fruits on the nose such as dried apricots and prunes. Sweet biscuit, cereal malt and dark brown sugar with a long lasting buttery finish. And that’s all before it goes in the barrel!

By modifying yeast, brewing and distillation techniques we have achieved a new make quality which we are extremely proud of.

Maturation

Maturation develops a myriad of aromas, flavours, and complexities to our carefully crafted newmake spirit. As our newmake enters the barrels, it embarks on a transformative journey, taking on a whole new life. Each barrel, carefully selected and meticulously maintained, adds its unique character to the maturation process.

Our dedicated team, with their discerning palates, undertakes the ‘arduous’ task of regularly tasting each barrel to ensure that it matures with precision and excellence.

The artistry lies in the delicate dance between the newmake and the barrels, as they harmoniously collaborate to create a whisky of unparalleled quality, depth, and richness.
