Juniper spirit, distilled apricots and Middle Eastern black limes spend four months together in ex Pinot Nair barrels from the award winning Scotchman's Hill winery.
The oak enhances the brown sugar flavours from the sweet dried apricots whilst the traditionally cured black limes, which have been boiled in brine then sun-dried, add a salty sour complexity. The wine infused oak imparts a subtle yet gorgeous rose gold blush.
Grains of Paradise, an African pepper, gives sweet butterscotch with a peppery finish. Angelica root, the functional botanical, binds the aromas and flavours whilst providing woody and nutty notes.

Nose: Red cherries, vanilla & brown sugar with a full bodied juniper backbone.
Palate: Raspberries, red grapes, cinnamon tea cake and caramel.
Finish: Syrupy butterscotch schnapps quickly moves to a peppery, spicy finish with a hint of salt & sour lime.
